Ingredients

1/3 cup oats, ground to flour

1 T coconut flour

1 scoop VegaTeam chocolate protein

¼ tsp baking powder

½ zucchini, shredded

1 egg

Instructions

  1. Mix oats, coconut flour, protein powder, and baking powder.
  2. Microwave shredded zucchini and drain excess water. Add to dry mixture
  3. Add water to dry mix and zucchini until just combined.
  4. Add egg and mix well.
  5. Pour on greased waffle maker. Makes about 3 medium-sized waffles.
