1/2 cup plain, nonfat Greek yogurt
1/4 cup fresh blueberries
Cinnamon roasted sweet potatoes (1 small sweet potato, 1 tsp coconut oil, 1 tsp coconut sugar, 1 tsp ground cinnamon)
1 T peanut butter
- For cinnamon roasted sweet potatoes: slice sweet potato and toss with 1 tsp coconut oil, 1 tsp coconut sugar, and 1 tsp ground cinnamon. Roast in oven at 400 for about 20-30 min.
- Layer sweet potatoes, blueberries, and peanut butter over Greek yogurt and top with cinnamon.
