Prep time: 20-25 minutes

Ingredients:

1 package of farro (1 ½ cups dry)

1 yellow squash

1 zucchini

½ lb asparagus

1 T olive oil, plus more if needed 

1 T garlic

½ cup grape tomatoes

¼ cup chopped scallions

½ cup corn

½ cup feta cheese

¼ cup lime juice

Cilantro

Mrs. Dash, pink salt, pepper

Instructions:

  1. Cook farro according to package.
  2. Heat 1 T olive oil in skillet and add garlic, chopped squash, zucchini, and asparagus. Satutee until veggies are cooked through.
  3. Add cooked veggies to cooked farro along with chopped tomato, scallions, corn, and feta cheese.  
  4. Season with lime juice, fresh cilantro, pepper, pink salt, and Mrs. Dash. Add 1-2 T more of olive oil if it becomes too dry.
