1 box Eat Banza Mac-n-Cheese

1/4 cup almond milk

1 T olive oil

1/4 cup Trader Joe’s Roasted Red Pepper Dip

1 T minced garlic

2 grilled chicken breasts

1 cup roasted broccoli and cauliflower

1 handful of fresh spinach

Black pepper, red chili flakes


  1. Cook pasta according to package. I used almond milk and olive oil instead of cow’s milk and butter to reduce the saturated fat content.
  2. Mix in red pepper dip, garlic, chopped grilled chicken, roasted veggies, and fresh spinach to the prepared mac n cheese.
  3. Season with black pepper and red chili flakes.
