¼ cup oats ground to flour

1 T coconut flour

1 scoop vanilla protein (Vega Protein Smoothie)

1 T ground flax seed

¼ tsp baking powder

Cinnamon, pumpkin pie spice

¼ cup pumpkin puree

2 egg whites / 1 whole egg

1 T almond butter


  1. Mix together dry ingredients then add pumpkin and egg whites/egg.
  2. Add unsweetened almond milk until batter-consistency.
  3. Cook over medium heat.
  4. Top with almond butter and sliced banana.
