Ingredients:

¼ cup quick oats

1 T coconut flour

¼ cup pumpkin

¼ tsp baking powder

1 tsp chia seeds

¼ scoop About Time vanilla protein

1 egg white (3 T)

2-3 T unsweetened almond milk

¼ cup blueberries

2 spoonfuls plain, nonfat Greek yogurt

¼ scoop About Time vanilla protein

Instructions:

  1. Blend above ingredients (besides Greek yogurt and ¼ scoop protein). Mix in blueberries and pour into sprayed mug.
  2. Microwave for about 1:45.
  3. For icing, mix ¼ scoop protein with 2 spoon-fulls of Greek yogurt. Top cake with icing and EAT!
