3 oz tempeh
1 small sweet potato
1 cup mixed veggies of choice (I used green beans, kale, peppers, broccoli)
1 tsp sesame oil
1 T red curry paste
Curry powder, black pepper, liquid aminos, garlic
- Chop tempeh, sweet potato, onion, and vegetables. I like to pre-cook the sweet potato by microwaving it in a small bowl with a little water (covered with paper towel) for 3-4 min.
- Heat sesame oil in skillet and add tempeh, sweet potato, onion, and veggies to pan. Season with garlic, curry powder, black pepper, and liquid aminos. Stir-fry for 5-7 min until veggies are done.
- Add red curry paste and mix well. Remove veggies from pan.
- Fry 1 egg and serve on top of stir fry.
I found this at Kroger! This stuff has great flavor, is low-calorie, low-fat, and low-sodium.
