Prep time: 15 minutes
2 egg whites
1/4 cup sliced pepper
1/4 cup chopped asparagus
Handful of kale or spinach
2 T salsa
Black pepper, pink salt, chili powder, cumin
- Cook veggies in skillet with coconut oil spray. Remove from pan.
- Whisk 2 egg whites and 1 egg. Cook in skillet scrambled-style.
- Add veggies back in pan and season with pepper, salt, chili powder, and cumin.
- Heat corn tortillas and place egg and veggie mixture in each along with avocado and salsa.
