Ingredients:

1 egg

2 egg whites

1/4 cup sliced pepper

1/4 cup chopped asparagus

Diced onion

Handful of kale or spinach

1/4 avocado

2 sprouted corn tortillas

2 T salsa

Black pepper, pink salt, chili powder, cumin

Instructions:

  1. Cook veggies in skillet with coconut oil spray. Remove from pan.
  2. Whisk 2 egg whites and 1 egg. Cook in skillet scrambled-style.
  3. Add veggies back in pan and season with pepper, salt, chili powder, and cumin.
  4. Heat corn tortillas and place egg and veggie mixture in each along with avocado and salsa.
