Made my Sweet and Spicy Salmon recipe and served it over a crisp winter salad.  This is a great meal full of healthy fats, veggies, and protein!

Ingredients:

Salad:

1 handful of arugula

1 handful of spinach

1 handful of shredded brussel sprouts

1/4 cup reduced fat/fat free feta cheese

1/4 cup pomegranate seeds

Red onion

Roasted haricot verts (green beans)

1 T balsamic vinegar + 1 T olive oil

Instructions:

  1. Assemble salad ingredients and prepare sweet and spicy salmon recipe.
  2. Roast green beans in the oven at the same time as salmon to make it easy! Just spray with coconut oil/olive oil and season with pepper and pink salt.
  3. Serve salmon over salad with balsamic vinegar and olive oil.
