1 egg white

2-3 T pumpkin

½ scoop vanilla protein powder

3-4 T unsweetened almond milk

Pumpkin pie spice, cinnamon

1 slice whole wheat bread (Ezekiel bread is my favorite)

½ banana, sliced

1 T almond butter

1 T maple syrup


  1. Mix egg white, pumpkin, protein powder, almond milk, pumpkin pie spice, and cinnamon (may need to add more almond milk depending on protein powder used).
  2. Tear up piece of bread and mix with egg white mixture. Pour in sprayed mug and microwave for about 3 minutes, or until egg is cooked through.
  3. Top with banana, almond butter, and maple syrup.
