1 medium onion

1 cup sliced mushrooms (optional)

3 T minced garlic

2 T olive oil

1 can lite coconut milk

1 can diced tomatoes

1 can chickpeas

1-2 T liquid aminos

1 T maple syrup

1 T curry powder

1 T chili powder

1 T cumin

1 T turmeric

Salt and pepper to taste


  1. Chop onion. Put oil, onions, mushrooms, and garlic into a large pan and cook on a low-medium heat until onions start to soften.
  2. Add coconut milk and stir until dissolved.
  3. Add chickpeas, diced tomatoes, liquid aminos, and maple syrup.  Bring to a boil for about 5 minutes.
  4. Add spices and simmer for about 10-15 minutes.
  5. Serve with brown rice and roasted veggies!
